Ingredients

  • 2 tablespoons of dry active yeast (30 g)
  • 1/2 cup of warm water (125 ml)
  • 1/2 stick of dairy butter (65 g)
  • 1 cup boiling water (250 ml)
  • 1/4 cup of corn flour (50 g)
  • 1/4 cup light molasses (50 g)
  • Salt (to taste)
  • 3/4 cup full cream milk (185 ml)
  • 2 cups whole wheat flour (400 g)
  • 2 cups unbleached wheat flour (400 g)

Step-by-step instructions

  • First, dissolve the yeast in warm water in a small bowl. Let it stand for about 5 minutes to activate properly.
  • At the same time, in a large bowl, mix the butter, boiling water, corn flour, molasses, and salt. It’s important to stir everything well until you get a uniform result.
  • Once the butter has melted, it’s time to add the milk. Wait for it to warm up and add the dissolved yeast.
  • It only remains to add the whole wheat flour and the unbleached flour to get the dough ready. Knead it well with your hands to give it the desired texture. To do this best, put it on a floured surface.
  • Then, put the dough in a bowl, cover it with a cloth, and leave it in a warm place for at least 1 hour to double its volume.
  • After this time has passed, divide the dough in half and form loaves. Wait another 30 minutes and bake for another 30 minutes at 180 degrees C (350 F).
  • If necessary, extend the baking time a little more so that it bakes well on the inside. Let it cool and consume.
