Ingredients for the dough
- 1 tablespoon of self-raising flour
- 1 egg
- 1/2 sachet sweetener
Ingredients for the cream
- 300g (10 oz) cream cheese (choose light to reduce calories)
- 2 eggs
- 1/2 sachet sweetener
- Sugar-free jam to taste (red fruits give this recipe an incredible flavor)
- Zest of 1 lemon
- Lemon juice
- Oil or butter to line the tin
Instructions for sugar-free cheesecake
- Starting with the dough: put the sweetener in a bowl and add one egg. Beat well until ingredients are combined and it starts to foam
- Add the flour, continue beating. Beat well to aerate. This will give good texture.
- Grease the tin with oil or butter and pour in the dough.
- Bake in the oven at a low temperature until the dough is crisp and golden.
- For the filling, beat the two remaining eggs with the rest of the sweetener (1/2 sachet)
- Mix in the cream cheese, lemon juice and the lemon zest and continue beating until mixed well.
- When ready, remove the base from the oven and pour the filling on top.
- Return to the oven at 180ºC. The time it will take to bake depends on the oven. Keep checking its progress. It should be ready after 15 to 25 minutes.
- Remove from the oven and leave it to cool in the tin. If you try to remove it from the mold while still hot, it will break. Wait till it’s set to do this.
- Heat a couple of tablespoons of jam until it becomes more liquidy, and pour over the top of the cheesecake before serving.

Cheesecake with a biscuit base
We came up with this sugar-free cheesecake recipe because we didn’t have time to make the dough. You’ll see that replacing the dough from the first recipe with a biscuit base will give the same results and save time.
Ingredients for the base
- 150g sugar-free biscuits
- 60g melted butter
Ingredients for the cream
- 600g (21 oz) cream cheese
- 5 eggs
- 2 pots natural yogurt
- Vanilla essence
- 3 sachets sweetener
- Sugar-free jam
- Optional: blueberries, blackberries, raspberries or any fruit to go with your chosen jam to decorate.
Instructions for the sugar-free cheesecake
- Crush the biscuits into crumbs. You need to break the biscuits into small pieces without turning them into a fine powder.
- Melt the butter in the microwave, add to the crushed biscuits and combine.
- Add the mixture into a pre-greased tin. Make sure the base is tightly compacted.
- Bake in the oven at 180°C (350°F) for 5 minutes.
- Mix the remaining ingredients in a bowl to make the filling.
- Remove the base from the oven and pour the filling on top.
- Bake in the oven at 160°C (320°F) until the top begins to color. The time it will take to cook depends on your oven (typically 30 to 45 minutes).
- Remove the cheesecake from the oven and leave it to cool in the tin.
- Repeat the above instruction to decorate it. Add fruit if you wish.

Cheesecake in a glass

How to make a cheesecake in a glass
- Place 2 tablespoons of granola in each cup or glass. Put to one side.
- Mix the cottage cheese or ricotta with the Greek yogurt well.
- Halve the mixture between the 2 cups or glasses.
- Cover each cup or glass with a tablespoon of sugar-free jam, and done! A delicious dessert in under 3 minutes.
