Kedgeree is a typical Indian dish made from rice and fish, with various seasonings that give it a special flavor. It’s considered a very nutritious dish, and it can be included in the context of a balanced and varied diet.

This recipe could also be prepared with jasmine rice instead of basmati. However, it’s always necessary to choose an aromatic variety so that the final result is optimal. It’s also recommended to choose long-grain rice.

Step by step

  1. Heat a dash of extra virgin olive oil in a frying pan and sauté the finely chopped onion for at least 10 minutes. The objective is to make it transparent.
  2. Boil water in a pot with salt.
  3. Once the onion is ready, add the curry and turmeric, stirring for a couple of minutes more.
  4. After this point, add the rice, making sure it mixes well with the oil and the spices. It will only be necessary to fry it for a minute and then remove it from the heat.
  5. The spiced rice has to be taken from the frying pan to the pot. Cook it for 10 minutes watching every so often, so that it doesn’t boil dry.
  6. To finish cooking, turn off the heat and add the butter. Stir well until it’s completely melted.
  7. Place the rice in a serving dish and cover it with the tuna and the boiled egg, the latter cut into wedges.
  8. Sprinkle chopped parsley on top.
  9. Just serve and enjoy.
