1. Seafood and corn salad

  • 200 g (7 oz) of lettuce
  • 1 can of sweet corn (150g)
  • 2 slices of pineapple (60g)
  • 6 cherry tomatoes
  • 25 cooked and peeled prawns
  • 5 tablespoons mayonnaise (75 ml)
  • 3 tablespoons of tomato sauce (60 g)
  • 2 tablespoons orange juice (30 ml)


  1. First, chop all the ingredients finely, keeping a few prawn tails for decoration.
  2. Then, in a large bowl, place the chopped ingredients.
  3. Add the corn, mayonnaise, sauce and orange juice.
  4. Cover with plastic wrap and place it in the refrigerator.

2. Chicken and corn soup


  • 1 chicken breast (about 300g – 10 oz)
  • 1 large potato
  • 1 medium onion (50 g)
  • A clove of garlic (5 g)
  • 1 carrot (60 g)

  • 1 glass of milk (200 ml)
  • 1 tablespoon of cheddar cheese (20 g)

  1. First, cook the chicken breast in a saucepan with salt, onion, and garlic.
  2. Then, once cooked, shred and set aside.
  3. Then, cook the potato and the carrot in the same water we cooked the chicken in.
  4. Next, add the shredded chicken, can of sweet corn, cream, milk, and cheddar cheese to the pot.
  5. Then cook for 30 minutes or until thickened.
  6. Then add the coriander and let it stand.
  7. Finally, serve with cubes of fresh cheese.

3. Cold pasta with tuna and corn


  • Short pasta (400g – 20 oz)
  • 3 cans of tuna (475 g – 17 oz)
  • 1 can of corn (150 g – 5 oz)
  • 2 hard-boiled eggs
  • Olive oil
  • Salt


  1. First, cook the pasta in water and salt.
  2. Then cook the eggs.
  3. After that, strain the pasta and pass it through cold water to stop it cooking.
  4. Add a drizzle of olive oil and set aside.
  5. Next, crumble the tuna, cut the eggs into small pieces, and remove the liquid from the corn.

4. Chicken in spinach and corn cream sauce


  • 2 half chicken breasts (about 250 g – 9 oz)
  • 2 cups of spinach, cleaned and cut into strips (80 g – 3 oz)
  • 1 can of corn (150 g – 5 oz)
  • 1 onion in rings
  • ½ cup sour cream (125 ml)
  • ½ cup chicken or vegetable broth (100 ml)
  • Salt
  • Pepper


  1. First, season the chicken with salt and pepper and fry it in a frying pan with a little oil and the onion rings.
  2. Then, when the chicken is done, add the corn and the spinach.
  3. Then, as soon as the spinach is tender, add the broth and cover.
  4. Cook until the spinach begins to boil. Next, add the sour cream and mix very well.

5. Rice with pork and corn

  • 2 cups of rice (300 g)
  • Pork meat in small pieces (about 400 g – 10 oz)
  • 4 glasses of vegetable broth (800 ml)
  • 1 onion
  • ½ red bell pepper
  • 1 green bell pepper
  • 1 can of corn (150 g – 5 oz)
  • 1 cup of peas (150 g – 5 oz)
  • 1 cup broccoli (170 g – 6 oz)
  • 1 diced carrot
  • One diced zucchini
  • Olive oil
  • Salt, pepper and oregano.


  1. First, in a frying pan with oil, sear the pork.
  2. Then add the onion, peppers, carrot and zucchini, and mix well.
  3. Add the rice and sauté for about three minutes. Then season with salt, pepper and oregano.
  4. Add the broth and cook over a high heat. When it starts to boil, cover it and continue cooking it over a very low heat.
  5. Cook it in this way for fifteen minutes and add the corn and broccoli.
  6. Season the rice and season to taste.
  7. Finally, let it stand and serve.
