Preparation

  • Firstly, wash the wild asparagus well. Then, peel off the hard part of its shell with the help of a peeler or knife.
  • Subsequently, chop them into several 1-inch pieces. Set them aside.
  • Separately, chop the onion and leek into small pieces.
  • Heat a frying pan with a little olive oil and stir fry the vegetables (including the asparagus) over medium heat.
  • Sauté for 10 minutes, until the vegetables turn golden brown.
  • Next, pour the sauce into a saucepan and add the vegetable or chicken broth.
  • Boil the preparation for about 10 minutes.
  • Then, add salt and pepper to taste.
  • After this time, when the asparagus is soft, let the preparation stand for a few minutes.
  • Once it stands, pour the contents into an electric glass mixer and blend until you get a smooth cream.
  • Strain the cream and pour it back into the pot.
  • Heat for five minutes over low heat and, finally, add the cream. If you want a creamier texture, add more cream. If you prefer it more liquid instead, add more vegetable broth.
