  • 2 tablespoons white vinegar (30 ml)

Preparation

  • Mix all ingredients in a bowl until you have a thick, homogeneous paste.
  • Serve the salad and add the vinaigrette on top.

Caesar Vinaigrette

Ingredients

  • 1 teaspoon of Dijon mustard (5 g)
  • 2 anchovies
  • The juice of ½ lemon
  • 1 teaspoon of Worcestershire sauce (5 g)
  • ½ loaf of stale bread
  • 1 egg yolk
  • 1 cup of olive oil (250 ml)
  • ½ of a garlic clove
  • ¼ cup of Parmesan cheese (50 g)
  • 2 heads of romaine lettuce
  • Salt and pepper to taste

Preparation

  • Crumble the stale bread, place it in the toaster oven, and sprinkle with a little oil and salt.
  • Bake for about 15 minutes and you’ll have crispy croutons.
  • Use a mortar and pestle to mash the anchovies into a paste.
  • Add the teaspoon of mustard, the lemon juice, the Worcestershire sauce, and black pepper to the anchovy paste.
  • Gradually add the olive oil and continue to mix until you get a dressing with the consistency of mayonnaise.
  • Add the Parmesan cheese and the croutons at the end.

  • 1 tablespoon of honey (25 g)
