Ingredients

  • 1 1/4 cup of flour
  • 115 g. of cream cheese
  • 1/3 cup of cocoa
  • 115 g. of butter
  • 3 eggs
  • 1 1/2 cup of sugar
  • Baking powder
  • 2 cups of blueberries
  • 1 pinch of salt
  • Vanilla extract (as much as you need)

Preparation

  1. First, sift the flour together with the baking powder, salt, and cocoa. Set to the side.
  2. Then, grease and flour the pudding mold.
  3. After that, mix the butter with the sugar until you get a smooth mixture.
  4. Add the eggs one by one, mixing continuously.
  5. Next, add the cream cheese and vanilla extract. Mix well.
  6. Add the dry ingredients and fold them in with a wooden spoon until you have a lumpy dough. Don’t mix too much to avoid activating the gluten in the dough, since then the blueberry and cocoa pudding will come out dry.
  7. Add the blueberries and fold them in.
  8. Then, pour the pudding in the mold and bake in the oven preheated to 160 °C (320 °F), until a toothpick comes out clean when you poke it (about an hour).
  9. Finally, it’s ready to serve with some fresh blueberries on top!
