Ingredients

  • 250 g of fresh sliced mushrooms
  • ½ a chicken breast (cut into strips) (200 g)
  • 1 tablespoon of olive oil (15 ml)
  • ½ cup of dry sherry (100 ml)
  • Wheat flour (for the batter)
  • ½ cup of chicken broth (100 ml)
  • 2 tablespoons of dried tarragon (30 g)
  • 2 green celery stalks
  • ½ a finely chopped onion
  • Salt and pepper to taste

Preparation

  1. Cut the chicken breast into strips, season to taste, and coat in flour.
  2. Add some oil to a frying pan and, when it’s hot, brown the protein on both sides until cooked. This process may take about six or seven minutes. Once ready, remove from heat and set aside.
  3. Place the celery, onion, and mushrooms in the same oil. Cook for a few minutes. Then, add the chicken broth, tarragon, and sherry.
  4. Cook over high heat and stir constantly until a thick sauce forms.
  5. Finally, put the protein back on the pan, lower the heat, and stir for a few minutes. The sauce should cover it completely.

Sherry and Mushroom Glazed Chicken Recipe 2

Ingredients

  • 120 g of mushrooms
  • ½ cup of sherry (125 ml)
  • 4 chicken thighs (150 g)
  • 2 tablespoons of extra virgin olive oil (30 ml)
  • ½ an onion
  • 1 garlic clove
  • Salt and pepper (to taste)

Preparation

  1. Heat the oil in a frying pan. Season the chicken thighs and then add them to the frying pan.
  2. Add the garlic and the finely chopped onion as well.
  3. Add a cup of water and the sherry to the frying pan. Cook for a few minutes more or until the chicken begins to soften.
  4. Clean the mushrooms and slice them. Add them to the frying pan.
  5. Cook for about 10 minutes and add more salt if necessary.

  • 1 head of garlic
  • A whole chicken (chopped) (1 kg)
  • 1 cup of sherry or white wine (200 ml)
  • A few sprigs of parsley
  • Oil

Preparation

  1. Wash the chicken and season to taste. Add enough oil to a frying pan so you can fry the chicken in it. When it’s golden brown, move the chicken to a pot so it stews.
  2. In the pot, fry the previously minced head of garlic and the parsley over medium heat.
  3. Then, add the pieces of fried chicken.
  4. Add the glass of sherry or white wine and cook everything for about 25 minutes or until the chicken is tender.
  5. Stir occasionally so that nothing sticks. Add more salt if necessary.

Orange and Sherry Glazed Chicken Recipe 4

Ingredients

  • The juice of 1 orange
  • 1 large chopped chicken (1 ½ kg)
  • A small onion
  • ¾ cup of sweet sherry (150 ml)
  • A small tomato
  • 150 g of minced Serrano ham
  • A pinch of cinnamon
  • Olive oil
  • 1 tablespoon of flour (5 g)
  • Two cups of water (400 ml)
  • Salt and pepper to taste

Preparation

  1. Season the chicken. Then, add enough oil to a frying pan so you can fry the chicken in it. Once it’s cooked and golden brown, set aside.
  2. Remove excess oil, leaving only the amount needed to make a stir-fry. Dice the onion and tomato and add them to the frying pan. When the tomato water evaporates, add the teaspoon of flour and stir for another minute.
  3. Add the chicken, water, orange juice, sherry, ham, and cinnamon.
  4. When it comes to a boil, reduce the heat, cover with a lid, and let cook for about an hour. Remember to stir the chicken every so often so nothing sticks.
  5. Finally, add some salt.
