How to Prepare Orange Marmalade

- 2.2 pounds of oranges (1 kg)
- 2 1/4 cups of sugar (or 500 grams; the exact final weight is calculated in proportion to the weight of the peeled oranges)
- The peel of 2 oranges
You can make more or less marmalade as long as you keep the same proportion of sugar and fruit according to the weight of the latter (once the peel’s removed).
Preparing orange marmalade
- Before you begin with the cooking, wash the oranges well under a stream of water.
- With a fine peeler or a sharp knife, remove only the orange part of the skin of 2 of the pieces of fruit. It’s best to avoid the white part, as it can give a bitter taste to the marmalade. Cut this skin into very thin strips or small cubes.
- Then, peel the rest of the fruit, remove the seeds, and weigh. For 2.2 pounds (1 kilo) of oranges, you need half the weight in sugar. Then, cut the fruit into small pieces.
- Place a pot or saucepan over medium heat with the orange and, when it starts to boil, reduce the heat to low. Let it cook for about 15 minutes. Add the sugar and the cut orange strips. Mix well and leave everything together for another 45 minutes, keeping an eye on it from time to time to prevent the marmalade from sticking.
- After this time, check the cooking point. To do this, place a little jam on a plate and tilt it. If it slips easily, then it still needs a little more cooking time. Otherwise, turn off the burner.
- Now your orange marmalade’s ready to be packed in sterilized glass jars to use it whenever you feel like it.
Tips for canning and storing orange marmalade
To enjoy orange marmalade for a long time and safely, preparation, packaging, and preservation are important. For this reason, you need to follow the recommendations of food safety experts.
In this case, we recommend cleaning the glass jars with hot water and keeping them at this temperature until you’re ready to use them. Once the jam is ready, fill the jars up to about a quarter-inch from the upper rim.
Close the jars and put them in a pot with water. When it starts to boil, wait between 5 and 10 minutes. Let them cool to room temperature and they’re ready to be stored in the pantry.
According to the National Center for Home Food Preservation, following all these steps will keep orange marmalade in good condition for up to one year. Stored in a dry, cool, and dark place, it can maintain all its original quality and flavor.
