  • 9 ounces (250 grams) of fresh raspberries
  • A quarter of a lemon
  • 3.5 ounces (100 grams) of sugar
  • A dash of honey

Step by step

Start by placing water in a saucepan to dissolve the sugar. To make this step easier, you can start with a low fire to later reach the boiling temperature. Once it comes to a boil, lower the heat again and stir to form a syrup. When this happens, remove the saucepan from the heat and allowed it to cool to room temperature.

Once the prepared syrup has cooled, it’s time to introduce it into the glass of a blender. Wash the raspberries with water, to remove impurities, and add them to the glass as well.

It’s important to blend for 2 or 3 minutes until a thick puree is obtained. At this point, you can add a small dash of honey, although this is optional.

When the crushing process is finished, pass the puree through a chinois or a fine sieve to remove the seeds of the raspberries and get a much finer result. The texture should be smooth and not too thick.

Finally, add a few drops of lemon juice. This technique will make the raspberry sauce withstand oxidation better, to preserve its organoleptic characteristics for longer. You can add more juice if you like the sour taste, but this is a personal matter. Lastly, stir everything well until it’s mixed well.
