There are many varieties of Spanish tortilla with potatoes, a traditional, omelet-like dish. Eggs and fried or boiled potatoes serve as a versatile, very tasty base.

Classic Spanish tortilla with potatoes comes in all kinds of delicious varieties. You may like your potatoes nice and soft or crunchy: there’s an option for everybody.

They say that each cook makes tortilla a little differently, even with the same ingredients. Before getting to the recipe, we’ll give you some tips so yours comes out perfectly.

How to make perfect Spanish tortilla with potatoes

The following tricks will help your tortilla turn out perfect:

  • The number of eggs you use depends on their size; you’ll need fewer jumbo eggs than regular-sized eggs.
  • As for the proportions, we recommend one large egg per 100 grams of potatoes.
  • It’s best to slice the potatoes up in even slices so that they all cook at the same speed.
  • As for the order, first fry the potatoes and then the onion. The reason is that onions shouldn’t be overcooked. We even suggest doing them in separate pans; you’ll notice the difference in the flavor and texture.
  • Use mild-tasting olive oil, not necessarily extra virgin oil.
  • A pinch of powdered yeast in the eggs when you beat them will make them rich and spongy. And if you add a bit of milk, they’ll be nice and moist.
  • Don’t beat the eggs for too long, so that they can solidify well.
  • The best side dish for Spanish tortilla with potatoes is crusty bread.
