Three Simple Banana Bread Recipes

The origin of banana bread is believed to be in Southeast Asia. With that said, no one is really sure because there is not a lot of documentation or information about the history of this bread.

Classic Banana Bread

The first recipe is a version of the classic recipe. The one difference is that this recipe does not use butter. This means that this recipe does not contain any saturated fats.

How do you keep these bread moist, then? Use oil instead of butter.

We recommend using olive oil because of its nutritional value.

Ingredients

  • 3 eggs
  • 200 g of white sugar
  • 200 ml of oil
  • 3 bananas
  • 200 ml of milk
  • 400 g of self-rising flour
  • A pinch of baking soda
  • A drop of vanilla extract
  • Ground cinnamon (to taste)

Preparation

  1. First, preheat the oven to 180 °C (350 °F).
  2. Prepare the baking pan with flour and oil or spray.
  3. Beat the eggs and sugar until it becomes a homogeneous mixture and there are no lumps. It should be a whitish color.
  4. Now, add the oil and milk and continue beating.
  5. Then, peel the bananas and use a fork to smash the bananas.
  6. Mix the smashed bananas into the mixture.
  7. Next, sift the flour, baking soda, and ground cinnamon. Set aside.
  8. Pour the vanilla extract into the liquid mixture and beat until it is mixed in well.
  9. Add the flour and baking soda mixture and mix in well. Avoid over-beating because that can activate the gluten and make the bread dry.
  10. Bake for about half an hour or until you can insert a toothpick and it comes out dry.

Banana Bread with Seeds and Nuts

Another ingredient full of nutrients are seeds and nuts.

For this recipe, use sunflower seeds and flax seeds. (You can, of course, add any nuts or seeds that you like.) To give this recipe even more fiber content, we recommending using integral whole wheat flour instead of normal flour.

Ingredients

  • 3 bananas
  • 150 ml of olive or sunflower oil (whichever you prefer)
  • 150 g of brown sugar
  • 3 large eggs
  • 100 g of walnuts
  • 100 ml of milk
  • 350 g of integral whole wheat flour
  • 1 packet of baking powder (16 g or 1 tablespoon)
  • Flax seeds and sunflower seeds (as many as you like)
  • Oat flakes (to taste)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Use a fork to smash the bananas and place them in a bowl.
  3. Then, add the milk to the bowl and mix well. Set aside.
  4. Now, beat the eggs in a bowl. Add the oil and sugar and beat until the mixture is homogeneous and becomes slightly voluminous.
  5. Add this mixture to the banana and milk mixture.
  6. Next, sift the flour together with the baking powder and then add it to the mixture and mix well.
  7. Chop the walnuts into small pieces and add it to the mixture.
  8. Grease and flour the baking mold and pour the mixture into the mold.
  9. Sprinkle the top with the seeds and oat flakes.
  10. Bake for an hour or until a toothpick can be inserted and comes out clean and dry.

Banana and Carrot Bread

This last recipe is a delicious vegan recipe that combines the sweet flavors of carrots and bananas to create a colorful, textured, and tasty bread.

Ingredients

  • 2 cups of spelt flour (also known as dinkel wheat or hulled wheat)
  • 75 g of coconut
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • 110 ml of almond milk
  • 56 ml of extra virgin olive oil
  • 3 bananas
  • 3 carrots
  • 80 g of walnuts

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Shred or grate the carrots and smash the bananas with a fork.
  3. Now, shift the flour, baking powder, baking soda, and pinch of salt.
  4. Add all of the dry ingredients together with the olive oil, milk, and smashed bananas. Mix well.
  5. Add the coconut and carrots.
  6. Grease and flour the baking tin.
  7. Then, pour the mixture into the baking tin.
  8. Bake for 45 minutes or until a toothpick can be inserted and removed clean and dry.

General Tips and Ideas

  • You can include chocolate chips as a variation in the first recipe.
  • If you want to reduce the amount of sugar in each recipe, use very or over-ripe bananas.
  • You can include any type of seeds or nuts in any of the recipes. You can add them to the top of the bread or inside it.
  • Another interesting idea is to add other fruits, like blueberries, with the bananas.
