In fact, did you think that pumpkin could only be served in savory dishes?
The truth is, in many countries, sweet pumpkin recipes are actually the most common, like this pie. The ingredients are:
For the pie base:
- One pie base, or if you want to prepare the base yourself, one cup of flour, one teaspoon of rising powder, half a cup of milk, one tablespoon of sugar and half a cup of olive oil.
For the filling:
- 1 cup of pumpkin
- 1 cup of milk
- 1/2 a cup of sugar
- 2 tablespoons of flour
- 2 eggs
- lemon zest
For the topping:
- 1 tablespoon of sugar
- 1 tablespoon of rum
- 1/2 tablespoon of water
- strawberries, apple, pear, peach, or other fruit (some people use walnuts, almonds or hazelnuts).
First, prepare the pie base. Mix all the ingredients and cook in the oven for 20 minutes, until it starts to brown.
The filling is made by heating the milk with the cinnamon and the grated lemon. Then, add the cooked pumpkin and blend it. Later, add the eggs, sugar and flour and mix until it has the consistency of a paste or cream. Finally, add the milk and heat on the stove but do not allow it to boil.
For the topping: cut the fruit into slices, mix with water, sugar and rum and boil for 5 minutes until a syrup is formed. Then, leave to cool. In addition, fill the pie base with the filling, and cover the pie with the topping.
