3 Great Pumpkin Recipes
Many people think pumpkin is only used in savory recipes, but today we'll give you pumpkin recipes both savory and sweet.
If you’re a fan of pumpkins, you won’t be able to resist having a sneak peek at these three great pumpkin recipes.
We have a starter, main dish and dessert just for you — a complete pumpkin menu: eat them all on the same day, or on different occasions!
Starter: cream of pumpkin soup
This soup is very easy to make and so much healthier than a packet soup. The ingredients are:
- 1 lb. of pumpkin
- 3 carrots
- 1 leek
- 1 potato
- 4 cups of cream
- olive oil
Wash and cut up all the vegetables. Place them in a pan with water and salt, and cook for 20 minutes or until soft enough to puree. Strain and blend until the mixture is creamy, then add the cream and olive oil.
Place in a casserole to heat up. Serve in soup bowls.
Main dish: stuffed grilled pumpkin
This is one of the best pumpkin recipes, because you can use whatever stuffing you wish: meat, rice or chicken, for example.
Let your imagination go wild when cooking this delicious recipe. The ingredients you’ll need are:
- 1 pumpkin cut into slices, or the whole pumpkin, without the seeds
- Chicken breast, chopped meat or rice, for the stuffing
- 1 onion
- olive oil
- grated cheese
Put the pumpkin in a pan to boil and chop the celery and leek to make a quick broth (if you are going to use rice stuffing, cook the celery and leek with the rice).
Fry the meat or chicken with the chopped onion. Once everything is ready, mix the stuffing and fill the pumpkin with it, topping it with the milk and grated cheese.
Put it in the oven until the cheese melts. Season with nutmeg and cumin.
Dessert: pumpkin pie
Did you think that pumpkin could only be served in savory dishes?
The truth is, in many countries, sweet pumpkin recipes are actually the most common, like this pie. The ingredients are:
For the pie base:
- One pie base, or if you want to prepare the base yourself, one cup of flour, one teaspoon of rising powder, half a cup of milk, one tablespoon of sugar and half a cup of olive oil.
For the filling:
- 1 cup of pumpkin
- 1 cup of milk
- 1/2 a cup of sugar
- 2 tablespoons of flour
- 2 eggs
- lemon zest
For the topping:
- 1 tablespoon of sugar
- 1 tablespoon of rum
- 1 tablespoon of water
- strawberries, apple, pear, peach, or other fruit (some people use walnuts, almonds or hazelnuts).
To prepare the pie base, mix all the ingredients and cook in the oven for 20 minutes, until it starts to brown.
The filling is made by heating the milk with the cinnamon and the grated lemon, then adding the cooked pumpkin and blending it. Add the eggs, sugar and flour and mix until it has the consistency of a paste or cream. Add the milk and heat on the stove but do not allow it to boil.
For the topping: cut the fruit into slices, mix with water, sugar and rum and boil for 5 minutes until a syrup is formed. Leave to cool. Fill the pie base with the filling, and cover the pie with the topping.
