  1. Peel, wash, and cut the eggplants into slices. Salt them.
  2. Then, sprinkle the eggplants with a dash of lemon juice to prevent them from oxidizing and leave them out for 30 minutes.
  3. Meanwhile, chop the onion and garlic finely.
  4. In a saucepan over low heat with a splash of oil, add the onion, season with salt and pepper, and fry for 10 minutes.
  5. Then, add the garlic and sauté for 5 more minutes.
  6. Add the crushed tomato, a little salt, and sugar to correct the acidity. Lower the heat to medium-high for 20 minutes, stirring occasionally.
  7. Turn on the oven to 180ºC (350F) with heat from below.
  8. Place the eggplants in a greased baking dish with a little oil. Then, add a little oil on top and bake for 20 minutes.
  9. Meanwhile, continue to stir the tomato sauce and add salt and sugar if necessary.
  10. When it has been reduced by half, add the finely chopped basil to the sauce and cook for 5 more minutes.
  11. Remove the eggplants from the oven and arrange them on a clean serving dish so that there’s a layer of tomato, a layer of eggplants, a layer of tomato and Parmesan cheese, and a layer of eggplants. Do this until all the ingredients are used up, finishing with a layer of tomato.
  12. Cut the mozzarella balls and spread them over the surface.
  13. Bake at 180ºC (350F) until golden brown.
