For this recipe, we’re going to make Malaga Noodle Soup. This includes a mixture of different vegetables and fish native from the South of Spain.

Ingredients

  • 1 onion
  • 1 green bell pepper
  • 3 garlic cloves
  • 2 ripe tomatoes
  • 1 bag of frozen calamari (200 g)
  • 1 or 2 fish fillets for the broth (200 g)
  • ⅔ cup of frozen peas (100 g)
  • 1 teaspoon of paprika (5 g)
  • 4 cups of fish broth (1 litro)
  • ¾ cup of thick noodles (150 g)
  • 1 bay leaf
  • ½ cup of olive oil (100 ml)
  • Salt
  • Pepper
  • Water

Directions

  1. First, finely dice the onion, peppers, and garlic. Stir fry these ingredients with olive oil in a saucepan.
  2. Once these ingredients are tender, add the (previously diced) tomato and stir constantly. Stir fry for about 10 more minutes or until all the ingredients are completely cooked.
  3. Meanwhile, bring salted water to a boil in another saucepan.
  4. Clean, skin, and fillet the fish if necessary: the fish needs to be completely clean and free of bones before you put it into the soup. If you so desire, you can also add the fish skin and bones to the broth to give it more flavor.
  5. Next, add the paprika to the stir fry and stir well. Immediately after, add the hot water to said stir fry. If you added the fish bones and/or to the water before, you’ll need to strain the water before incorporating it into the stir fry. Otherwise, you’ll end up with bones in your soup, which could actually be quite dangerous. You cannot add bones or skin to the finished soup product.
  6. Now is the time to add in the fish, frozen peas, and noodles.
  7. Then, simply let it boil for 8 to 10 minutes more, or until the noodles are perfectly cooked.

Another Recipe for Noodle Soup

Pork and vegetable noodle soup

For this next recipe, we’re going to make a traditional noodle soup. This is a super easy recipe to follow, and will only take 30 minutes to prepare.

Ingredients

  • 2 ½ cups of pasta (300 g)
  • 1 cup of pork loin (200 g)
  • 4 tablespoons of fried tomatoes (60 ml)
  • 1 tablespoon of stir fried onion (15 g)
  • 1 green bell pepper
  • Garlic and parsley
  • 1 tablespoon of oil (15 ml)
  • Salt
  • Bones
  • Water

Directions

  1. First, in a saucepan, pan fry the meat on both sides with some olive oil.
  2. Add in the onion and finely diced bell pepper and stir fry all the ingredients. Stir constantly so it doesn’t burn.
  3. To finish with the stir fry, add in the fried tomato and lightly fry the ingredients for about a minute.
  4. Meanwhile, in another saucepan, boil some water with salt and the bones from the meat. Once it’s been boiling for 10 minutes, add this broth to the stir fry. Also, add the garlic and parsley.
  5. Turn up the heat, add the pasta, and let it boil for another few minutes.
  6. Once it’s boiling, turn the heat to low and let it cook for 10 to 15 minutes more.
