How to Make Spaghetti and Pumpkin

A classic recipe for spaghetti and pumpkin

As you know, the most common recipe made with pumpkin is cream of pumpkin soup. This vegetable is most commonly served mashed or pureed.

It can even be used to make a sauce to go with other dishes. This is essentially what we’re going to do with this recipe.

In the classic recipe for spaghetti and pumpkin, you’ll use the pumpkin to make a sauce for the pasta. We suggest using spaghetti here but you can easily substitute any other type of noodle.

What’s interesting is how the flavors combine and blend in a delicious way.


  • Spaghetti (300 g)
  • 1 large onion
  • 3 cups of peeled pumpkin (600 g)
  • 1 cup of heavy cream (250 ml)
  • 2 tablespoon of olive oil (30 ml)
  • 2 tablespoons of nutmeg (30 g)
  • 1 tablespoon of salt (15 g)
  • 1 tablespoon ground black pepper (15 g)
  • 2 cups of Parmesan cheese (optional) (200 g)


  • Add a drizzle of olive oil to the pan and add the onion. Sauté over medium heat with a little salt.
  • Then, add the peeled and seeded pumpkin to the pan with the onion. Cook until it softens.
  • From time to time, you should stir a little to get a more homogeneous and uniform mixture.
  • Meanwhile, it’s time to add the spaghetti to a pot of water, oil, and salt and let it cook.
  • Finally, add the heavy cream to the pan and stir with a little cheese. When the spaghetti is ready, add the other ingredients and cook for 2 more minutes.

A recipe for spaghetti with pumpkin and mushrooms

This variation of the original recipe makes it almost easier than the first. What’s more, if you have some extra time you can add some pesto and chicken fillets. However, by preparing it with pumpkin and mushrooms, you’ll have an unbeatable and very nutritious recipe.


  • 200 g of spaghetti
  • 3 chicken fillets
  • 2 cups of chopped pumpkin (400 g)
  • ½ cup of mushrooms (100 g)
  • 2 stalks of broccoli
  • 1 large onion
  • 2 garlic cloves, chopped
  • 2 tablespoons of extra virgin olive oil (30 ml)
  • 1 tablespoon of salt (15 g)
  • ¼ cup of white wine (62 ml)


  • Start by steaming both the pumpkin and broccoli.
  • Then, in a frying pan, brown the onion and the garlic.
  • Add the mushrooms once the onion is translucent. Mix everything together for one minute. Don’t forget to add the salt.
  • In the meantime, place the chicken fillets on a griddle or in a frying pan and grill them. Then, slice them and add them to the remaining ingredients.
  • Do the with the steamed pumpkin and broccoli.
  • Add the white wine to the pan with all ingredients and saute for two minutes. This will add a special touch of flavor.
  • Finally, remove from heat, allow it to cool, and enjoy!
