Baked chicken with potatoes and carrots

Ingredients

  • 1 chicken (3 lbs.)
  • 2 potatoes (60 g)
  • 1 lemon (20 g)
  • 1 onion (30 g)
  • 4 carrots (100 g)
  • ½ cup of white wine (100 ml)
  • 1 bay leaf, salt, and olive oil to taste

Instructions

  • Wash, peel, and slice the carrots.
  • Slice the onion.
  • Place the onion and carrots in a baking dish.
  • The cleaned chicken meat should be seasoned and placed on top of the vegetables.
  • Squeeze the lemon juice over the chicken.
  • Add the bay leaf, olive oil, and white wine.
  • Bake this dish for an hour in an oven that has been preheated to 350 ºF.
  • Turn it every half hour. Remove from the oven once the chicken is golden brown.
  • Fry the potatoes and serve them along with the chicken.

CarrotsBaked chicken with potatoes and onions

Ingredients

  • 1 onion (30 g)
  • 2 carrots (30 g)
  • ½ of a red bell pepper (15 g)
  • 2 medium potatoes (60 g)
  • ½ of a green bell pepper (15 g)
  • 1 cup of chicken broth (200 ml)
  • 2 chicken legs (150 g)
  • 1 small cup of white wine (150 ml)

Instructions

  • Place the chicken on a baking dish and season with thyme.
  • Slice the onions, peppers, carrots, and potatoes.
  • Add the vegetables with some salt and olive oil to taste. Bake it in the oven for one hour.
  • Half a cup of broth should be added every 20 minutes. After it has baked for 40 minutes, add the cup of white wine.
  • Just before the it’s done, bring the oven temperature to broil to brown the skin.

Chicken legs with baked potatoes, leeks, and carrots

Ingredients

  • 2 potatoes (60 g)
  • 1 leek (30 g)
  • 1 pinch of salt
  • Pepper to taste
  • Water (as needed)
  • 1 tablespoon of thyme
  • 2 carrots (30 g)
  • Vegetable oil to taste
  • 4 chicken legs (500 g)

Instructions

  • Preheat the oven to 400ºF
  • Cut the potatoes, leeks, and carrots into small pieces.
  • Place the vegetables on a baking dish and sprinkle some salt, thyme, and add a cup of water.
  • Cover and bake for 20 minutes.
  • Add the chicken legs seasoned with black pepper and another cup of water. Bake for another 25 minutes.
  • Just before the chicken is done, bring the oven temperature to broil to brown the skin.

Chicken breastBaked chicken with potatoes, mushrooms, and peppers

Ingredients

  • 1 pinch of salt
  • 3 cloves of garlic
  • 4 potatoes (100 g)
  • 2 onions (70 g)
  • Chicken (4 lbs.)
  • 1 red bell pepper (30 g)
  • 4 carrots (100 g)
  • 5 mushrooms (50 g)
  • ½ cup of water (00 ml)
  • Extra virgin olive oil
  • The juice from 1 lemon (50 ml)
  • 1 tablespoon of oregano (10 g)
  • 1 tablespoon of thyme (10 g)
  • ½ cup of white wine (100 ml)

Instructions

  • Mix the parsley, thyme, and oregano with the chopped garlic, lemon juice, and olive oil.
  • Remove the skin from the chicken and rub with salt and the herb mixture.
  • Wash and peel the potatoes. Cut them into small cubes.
  • Wash, peel, and slice the carrots.
  • Quarter the onions.
  • Place all of the ingredients above in a baking dish along with the mushrooms, bell pepper, a pinch of salt, oil, half a cup of wine, and half a cup of water.
  • Bake in a preheated oven at 350ºF for one hour.
  • Turn the ingredients every half hour. The chicken should be a golden brown and the vegetables should have full flavor.
