It’s delicious, nutritious and a symbol of Spanish cuisine. This tasty paella recipe gives you the pleasure of enjoying a wonderful healthy meal without having you feel guilty. 

This real delicacy is a combination of rice, stir-fried vegetables, shellfish, chicken or red meat. It’s high in protein, vitamin A, and minerals such as zinc, selenium, and iron. Likewise, the shellfish are a great source of omega 3 fatty acids. It’s good for preventing cardiovascular disease and for fighting against cancer.

Two Delicious Ways to Make Paella

1. Valencian Paella

Valencian Paella

The queen of all paella and one of the most famous Spanish dishes worldwide. People are often confused about “Valencian paella”  due to there being many types of rice.

Traditional Valencian paella — the one in the recipe below — has rabbit, chicken, and beans. It’s different from shellfish or mixed paella, which is a mixture of shellfish and chicken.

Ingredients for 4-6 Portions

  • 2 cups of rice (400 g)
  • 1/2 red pepper (30 g)
  • Salt and pepper, to taste
  • 4 cups of poultry stock (1 L)
  • A medium sized tomato (60 g)
  • 1 small sprig of rosemary
  • Extra virgin olive oil
  • 1/2 kg of chicken, cut into pieces
  • 1/2 kg of rabbit, cut into pieces
  • 1 handful of string beans (80 g)
  • 1/2 cup of white beans (100 g)
  • 1 teaspoon of paprika (5 g)
  • A few strands of saffron (you can substitute it with yellow coloring, but this isn’t recommended)


  1. Fry the pieces of chicken and rabbit in a paella pan (a large, deep frying pan) with olive oil.
  2. When the meat is lightly browned on all sides, add the string beans and stir for a few minutes, making sure that they do not burn.
  3. Cut the tomato into small pieces and add it along with the white beans. Afterwards add the paprika and mix well. Fry it for a few more minutes.
  4. Next, add chicken broth, saffron, rosemary, salt, pepper and increase the heat.
  5. While it’s boiling, add the rice and let it sit. You can add salt for flavor.
  6. Cut the red pepper into strips and add it in.
  7. Once the water is almost completely evaporated, lower the heat. Afterwards, cover it with a lid or aluminum foil and let it cook for 10 minutes.
  8. If the grains are soft, turn it off and let it sit for 10 more minutes and serve. Isn’t obvious, making paella this way is easy.

Ingredients for 4 people

  • 2 cloves of garlic
  • 1 onion (60 g)
  • 1/2 kg of squid
  • 1/2 kg of fresh shrimp
  • 1 medium tomato (60 g)
  • 1/2 red pepper (30 g)
  • 2 cups of rice (400 g)
  • 4 cups of fish stock (1 L)
  • 1/2 cup of peas (100 g)
  • 1 sprig of fresh parsley
  • Olive oil, salt and pepper to taste
  • Yellow food coloring or some saffron strands
  • 1 handful of seashells, clams and mussels (150 g)


  1. Start by cleaning and peeling the shrimp. Be sure to save the shells and heads for the broth.
  2. Clean the squid well and cut them into circles. Wash the shells with plenty of water in order to get all of the sand out.
  3. Add olive oil to a large frying pan. Fry the pepper, diced tomatoes and onion, then sprinkle some salt and pepper.
  4. Add the squid and the sea shells. Cook for a few minutes until it starts making a broth.
  5. Pour in two cups of rice and mix well. Then, add four cups of the previously prepared shrimp broth. You can add some water to it.
  6. While that’s cooking, add a teaspoon of yellow coloring or saffron and let it boil for 3 minutes.
  7. Add the fresh peas, shrimp, and chopped parsley while there is still liquid in the pan. Add salt and pepper to taste.
  8. When the liquid is almost dried, add some strips of pepper and prawns with their shells for decoration. 
  9. Lower the heat, cover it and let it cook for 15 more minutes until the grains of rice are soft. Sprinkle it with olive oil and serve.
