Almonds are the most used nuts in confectionery recipes because of their exquisite taste, and this recipe is no exception. This bread cake with almonds is similar to pudding or Calatrava bread, which is best served chilled. Its mild flavour is perfect to end a hearty meal, but it’s also ideal for breakfast or an afternoon snack.

The recipes we’ll propose are very simple and don’t require much time in the kitchen, making this almond bread a perfect dessert for the fall or to surprise your guests.

Option 1: A Recipe for Bread Cake with Almonds

Ingredients

  • 150 g ground almonds
  • 1 vanilla pod
  • 300 g white bread
  • 200 g candied fruit
  • 120 g sugar
  • 4 eggs
  • 100 g chopped dark chocolate
  • 750 ml milk
  • 1 teaspoon cinnamon
  • 80 g raisins
  • 100 g slivered almonds
  • Breadcrumbs
  • 2 tablespoons sugar
  • Butter

How to make it

  1. First, boil the milk with the vanilla pod. Do this for 3 minutes and then remove the vanilla pod.
  2. Cut the white bread into small pieces and pour the hot milk over it, being careful not to burn yourself. Leave to cool for 15 minutes.
  3. Then, preheat the oven to 180ºC.
  4. Beat the eggs, sugar, and cinnamon and add to the previous preparation.
  5. Add the candied fruit, raisins, chocolate and chopped almonds. Mix well.
  6. After, grease a 26 cm baking tin with butter and sprinkle with breadcrumbs.
  7. Pour the batter into the mould.
  8. Then, sprinkle with the sliced almonds on top and then with sugar.
  9. Bake in the oven at 180ºC for 25 to 30 minutes.
  10. Serve hot with a scoop of vanilla ice cream for best results.

Option 2: Another Recipe for Bread Cake with Almonds

Ingredients

  • 200 g flour
  • 125 g sugar
  • 4 eggs
  • 200 g butter at room temperature
  • 200 g ground almonds
  • 1 teaspoon Royal type baking powder
  • Zest of 1 lemon
  • Icing sugar

How to make it

  1. First, preheat the oven to 180ºC.
  2. Beat the butter with the sugar until it forms a smooth cream.
  3. Add the egg yolks one by one while beating and add the lemon zest.
  4. Sift the flour with the baking powder twice and add it to the mixture little by little, stirring constantly.
  5. Separately, beat the egg whites until stiff with a pinch of salt, until they’re completely white. You’ll know they’re ready when you turn the bowl upside down and the egg whites don’t fall out.
  6. Line an oblong mould with butter and pour the mixture into it.
  7. Bake at 180ºC for about 45 minutes or until a toothpick comes out clean.
  8. Leave to cool and sprinkle with icing sugar on top to serve. Enjoy!

Option 3: A Simple Recipe for Bread Cake with Almonds

Ingredients

  • 150 g ground almonds
  • 6 eggs
  • 15 plain biscuit cookies
  • 200 g sugar
  • 1 glass of milk
  • Liquid caramel for the mould

  1. First, preheat the oven to 180ºC.
  2. Then, separate the yolks from the whites of the eggs.
  3. Beat the yolks with the sugar until you obtain a whitish cream.
  4. Crush the plain cookie biscuits with the mixer until they turn into powder.
  5. Add the crushed biscuits, milk and almonds to the bowl and mix very well until a smooth mass is formed.
  6. Then, whip the egg whites until they’re completely white and stiff. Again, you’ll know they’re ready when you turn the bowl upside down and the egg whites don’t fall out!
  7. Add the egg whites to the bowl with the rest of the ingredients and mix everything well with the help of a whisk. It’s essential to do this step very carefully so that the egg whites are preserved well.
  8. Prepare the liquid caramel. Then, caramelize the baking pan.
  9. Pour the batter into the mould and bake it at 180ºC for about 45 minutes.
  10. After this time, check if the almond cake is set by pricking it with a toothpick. If it comes out clean, the cake is ready.
  11. Remove it from the oven and unmold it. Let it cool at room temperature. When it’s lukewarm, put it in the fridge. Serve it well chilled.
