1. Chocolate strawberry cake

This is the perfect combination of two-star ingredients on dessert menus. It’s a very thin dough with a creamy filling that can delight young and old.

Ingredients

  • Strawberries
  • A base of shortcrust pastry or shortcrust pastry.
  • 180 grams of chocolate with 70% cocoa
  • 180 grams of whipping cream (with 30-35% fat)

How to make this New Year’s dessert with strawberries

  • Preheat the oven to 180 ºC with heat both above and below.
  • Roll out and place the shortcrust pastry in a low rectangular mold. Prick with a fork and place in the oven until it takes on a little color. Then, let it cool and unmold it.
  • Put a saucepan on the fire with the cream to prepare the filling. Bring to a boil and lower the heat. Let it cook for about two minutes and stir well to avoid sticking. Then, remove it from the heat.
  • Chop the chocolate in a bowl and pour in the cream. Mix to melt it and let it rest until it’s warm. 
  • Pour this preparation on top of the already cooked shortcrust pastry. Let it cool, cover it with plastic wrap, and refrigerate for two hours.
  • Wash and remove the leaves from the strawberries. Dry well, cut in half, and place the cut part on top of the pie filling for decoration. 

2. Glasses of mascarpone with speculoos

If there’s any real Christmas aroma, it’s spice cookies like speculoos. Typical of Belgium, they’re very crunchy and are perfect for decorating any preparation with a crunchy and aromatic touch.

Ingredients (for four servings)

  • One egg yolk
  • Ten speculum cookies
  • 75 grams of icing sugar.
  • 5 milliliters of lemon juice
  • 100 grams of mascarpone cheese
  • 2.5 grams of gelatin in sheets
  • 100 milliliters of liquid cream to whip
  • 100 grams of raspberries or any other red fruit

Preparation

  • To start, prepare a raspberry compote. Put the gelatin sheets to hydrate with cold water for 10 minutes.
  • Place the fruit, 45 grams of sugar, and the lemon in a saucepan. Bring to a boil. Then, remove from the heat and add the well-drained gelatin sheets. Stir so that everything is well-integrated.
  • Pour the red fruit compote into four individual glasses and chill in the fridge for at least one hour.
  • Crush the cookies in a food processor or mixer and spread them on the raspberry layer.
  • After, hydrate the rest of the gelatin with cold water for 10 minutes. Pour the cheese into a bowl, add the egg yolk, and beat well.
  • Whip the cold cream in another container and gradually add the rest of the icing sugar. Then, add the cream with the mascarpone.
  • Drain the gelatin and melt in the microwave for a few seconds. Add to the cheese and mix well.
  • Pour over the cookie layer and place in the refrigerator for at least four4 hours before serving.

3. Lemon and blackberry tartlets for New Year’s dessert

Any berry combines well with lemon, so this can be varied to taste to prepare these delicious, unique bites.

Ingredients

  • Two lemons
  • Five eggs
  • 90 grams of sugar
  • Tartlets to fill
  • 125 grams of butter
  • 250 grams of blackberries or other red fruits
  • ½ glass of water (approximately 125 ml)

Preparation

  • Squeeze the lemon juice and grate the peel.

  • Finally, fill the tartlets with lemon cream and top with the fruit. 

4. More desserts with red berries: Yogurt ice cream

Ingredients

  • 50 grams of sugar
  • 500 grams of naturally sweetened yogurt
  • 275 grams of frozen berries of your choice (blackberries, blueberries, or raspberries)
  • 100 grams of coconut milk (chilled previously)

It can be prepared with a wide-mouth jug, thermomix, or a blender glass.

How to make a New Year’s dessert ice cream with red berries

  • Pour all the ingredients into the chosen container and blend until you get a fine cream. If you want to remove the seeds of the berries, first crush them separately and then pass them through a sieve. 
  • Change the contents to a container with an airtight seal. It’s best if it’s stainless steel.
  • Then, put it in the freezer. After an hour, take out, beat again, and freeze. This allows the ice cream to aerate and prevents the formation of ice crystals.
  • Repeat this step at least two or three more times.
  • Serve in glasses and decorate with caramelized nuts, caramel syrup, wafers, or whipped cream. To form perfect balls, remove five minutes before serving from the freezer.

5. Fresh cheese with blueberry jam for New Year’s dessert

This dessert is very quick and easy to assemble since the fruit compote can be prepared in advance.

Ingredients

  • ½ lemon
  • 500 grams of sugar
  • 1 kilogram of cranberries
  • Split walnuts to decorate
  • Fresh cheese made from cow’s or goat’s milk

Preparation

  • Wash the cranberries and pour them into a saucepan along with the lemon juice. Cook for about two minutes or until the fruit begins to release its juice.
  • Add the sugar slowly and stirring constantly and cook over low heat for about 20 minutes. At the same time, stir from time to time to avoid sticking.
  • Pack into containers and cover when it has cooled down. Store in the refrigerator. 
  • The jam can be prepared in advance. To assemble the dessert, cut a slice of fresh cheese. Place on a plate and pour a good amount of cranberry cream. Decorate with some walnuts. 

6. Light berry desserts: Strawberry, raspberry, and blueberry jelly

This is the perfect ending to New Year’s Eve dinner or any heavy meal, as it’s a really light and smooth dish.

Ingredients

  • One cup of strawberries
  • ½ cup of sugar
  • Three sheets of gelatin
  • One glass of raspberries
  • ½ liter of cranberry juice
  • More raspberries for garnish (or other berries)

Preparation

  • Soak the gelatin sheets following the manufacturer’s instructions.
  • Crush the fruit, and then add the juice and sugar.
  • Pour this mixture into a saucepan and put it on low heat. Once hot, add the drained gelatin sheets and stir continuously to integrate well.
  • Then, fill the molds and put them in the fridge until the consistency is solid.

7. Matcha tea pudding with currants

Ingredients

  • 80 grams of honey
  • 40 grams of cornstarch
  • A few drops of vanilla extract
  • 3-4 tablespoons of powdered matcha tea
  • To decorate currant berries, whipped cream, and chocolate shavings
  • 600 milliliters of a vegetable drink of choice: Almond, hazelnut, or oatmeal milk

Preparation

  • Put the vegetable drink in a saucepan and set aside a little to dissolve the cornstarch. Add the matcha tea and honey. 
  • Then, place on the stove and stir well to dissolve the tea as it heats. 
  • Dilute the cornstarch with a little vegetable drink and add a few drops of vanilla extract. When the contents of the saucepan come to a boil, add to the previous mixture.
  • Then, beat well continuously until it’s thicker. 
  • Remove from the heat. Now is the time to rectify the sweet and vanilla point! (Add any more sugar or vanilla to taste).
  • Pour the pudding into individual cups or bowls and let cool. Store in the refrigerator until serving time. Garnish with some fresh currant berries, a little cream, or dark chocolate shavings.

To make these recipes, it’s essential to have top-quality ingredients. This doesn’t necessarily mean buying at a high price, but rather choosing fruit that are as fresh as possible and purchasing with the minimum amount of time in advance.

However, you can use frozen berries to save yourself some work. This also allows you to make some parts of the recipes in advance. 

It’s not a problem if the variety of fruit you are looking for isn’t available, since all of these berries are interchangeable in most cases. Strawberries, blueberries, blackberries, or raspberries can be used based on your individual convenience and taste preferences.
