  • Chop the red pepper into small cubes, and then mix it in a bowl with the avocado and picked pieces of coriander.
  • Add the sweetcorn, and mix it evenly.

  • 2 chicken breasts, skinned and boned.

  • 1/4 onion, chopped.
  • 1 cup of cream (200 g)
  • 3 tablespoons of chicken stock (45 ml)
  • 1/3 cup of water (83 ml)
  • Salt and pepper (to taste)
  • Olive oil


  • Season the chicken with salt and pepper and fry it in a pan with a little olive oil and the chopped onion.
  • When it’s cooked, add the sweetcorn and the spinach.
  • Reduce the heat, and wait until the spinach softens. Then add the chicken stock, diluted in the water.
  • When it begins the boil, gradually add the cream, mixing as you do.
  • Leave it 5 minutes longer and serve.
