- 1/4 cup of chicken broth without fat, or water (60 ml)
- 1 cubed ripe avocado, peeled and without the pit
- 1/4 cup of natural, low-fat yogurt (125 ml)
- 1/4 small onion
- Salt and pepper to taste
- 1 cilantro bunch
- 1 tablespoon of vegetable oil (15 ml)
- Blend the avocado, yogurt, onion, cilantro, salt and pepper until it forms a cream.
- In a medium-sized pot, heat the oil.
- Add the mixture from the blender and put on low until it boils.
- Add the chicken broth and more salt and pepper if necessary. Let it boil again until you have a creamy consistency.
To serve this recipe as a soup, simply garnish with a few avocado cubes and cilantro. Try it with bread or croutons. If you make the cream to go along with your meat or protein, add a tablespoon or two when you serve it.
You can vary the thickness of the cream by changing the quantity of chicken broth. Another way to use this cream is with pasta; the result is very creamy and kids love it.
