Ingredients (for 2 or 3 people)

  • 1 bag of spinach (500 g)
  • 2 red apples
  • 1 cup of mixed nuts (150 g)
  • ¼ cup of goat cheese (50 g)
  • 1 cup of turkey mortadella (150 g)
  • Condiments: sweet mustard, black pepper, salt, olive oil.

Preparation

  1. Wash and drain the spinach well. Then, put it in a salad bowl and set it aside.
  2. Julienne slice the apples (without removing the skin).
  3. In a separate dish, prepare the dressing from sweet mustard, olive oil, salt and black pepper. Thoroughly scoop out all of the ingredients with a spoon and reserve.
  4. Cut the turkey mortadella into small cubes and sprinkle them over the spinach.
  5. Next, cut the goat cheese into thin slices and add it to the spinach.
  6. Pour the dressing over the top and stir to mix all the ingredients. Enjoy!

Couscous with Nuts and Red Onions

Ingredients (for 2 or 3 people)

  • Olive oil
  • ½ a red onion
  • Sea salt
  • 2 cups of couscous (200 g)
  • 1 small zucchini
  • 2 tablespoons of raisins (30 g)
  • 1 red and 1 green pepper
  • 2 cups of vegetable or chicken broth (400 ml)
  • A mix of nuts: almonds, peanuts, pistachios, hazelnuts

Preparation

  1. Pour the chicken broth in a pot, and heat it over medium heat.
  2. Once it begins to boil, add the couscous and a tablespoon of olive oil. Slowly stir a couple of times and let it rest until the couscous begins to absorb the broth. Remember that the ideal amount of broth should always be two cups of broth for each cup of couscous.
  3. Once it’s ready, turn off the heat and let it cool to room temperature.
  4. Meanwhile, wash and peel the zucchini. Then, dice it into small pieces. Do the same with the onions and the peppers.
  5. Heat a pan over high heat, add a dash of olive oil and then pour in all the diced vegetables to sauté them.
  6. Once the onion is well-browned, sprinkle the nuts and a little sea salt over all of the vegetables. Set the burner to low heat after about two to three minutes. Let everything cook in their own juices for one or two minutes, and turn off the burner.
  7. Put the couscous in a glass bowl and add the mixture of nuts and vegetables. Then, use a spoon to mix all the ingredients well.
  8. Finally, spread the raisins over everything, and serve.

Zucchini Carpaccio with Dried Fruits

  • Lemon juice
  • 3 zucchini
  • 1 ¼ cup of Parmesan cheese (250 g)
  • 1 cup of sliced ​​almonds (150 g)

Preparation

  1. Peel and wash the zucchini. Next, proceed to chop the zucchini into slices.
  2. Separately, cut the Parmesan cheese into slices (You could also grate it).
  3. In a small bowl, mix the lemon juice with the seasonings.
  4. Put the zucchini slices in a salad bowl, and place a slice of Parmesan cheese and a small amount of sliced almonds on top each one.
