- 1 cup of coconut milk (200 ml)
- 2 ripe bananas
- 2 large dates
- 1/4 cup raw almonds (40 g)
- Ice (as desired)
- First, pour the coconut milk into the blender. Add the dates.
- Next, break the bananas into pieces and drop them into the milk.
- Finally, add the raw almonds and blend.

2. Coconut Creme Caramel
One of the most popular coconut milk recipes is this exquisite creme caramel. Unlike the traditional recipe, this one is apt for those with a dairy intolerance. It’s also lower in calories, so you can eat it occasionally guilt-free.
- 1 cup sugar or sweetener (200 g)
- 1/2 cup water (100 ml)
- 1/4 cup shredded coconut (50 g)
- 4 eggs
- 1 cup coconut milk (200 ml)
- First, heat a pan over a medium heat. Pour in the water and sugar or sweetener.
- Cook until the sugar caramelizes and turns a dark brown.
- Remove from the heat and pour into the bottom of your molds.
- Next, beat the eggs and slowly add the coconut milk until well-combined.
- Preheat your oven to 350ºF and add the egg and milk mixture to the caramelized molds.
- Cook over a double boiler for 20-25 minutes.
- Finally, allow to completely cool in the refrigerator before removing them from the molds.

3. Dulce de leche and coconut ice cream
This recipe is higher in calories than the previous two. And, because it contains dulce de leche, (a type of caramelized condensed milk) it’s not recommended for people with lactose intolerance or diabetes. This dish is to be enjoyed in moderation and small portion sizes.
- 2 cups coconut milk (500 ml)
- 1 tablespoon butter (15 g)
- Dulce de leche (100 g)
- 2 eggs
- 4 tablespoons cornstarch (60 g)
- 1/2 cup sugar (100 g)
- Nutmeg (to taste)
- Shredded coconut (to taste)
- Salt (to taste)
- First, pour half of the coconut milk into a pot with the butter and nutmeg. Bring to a boil.
- On the side, in a bowl, add the rest of the coconut milk and mix in the cornstarch, the sugar, the eggs, the dulce de leche, a pinch of salt, and shredded coconut.
- When the milk and butter mixture comes to a boil, add the above mix. Lower the heat and combine.
- Once your mixture is thick and creamy, remove from heat, pour into a separate container, and place it in the freezer.
- When the ice cream is ready, sprinkle with shredded coconut.
