If you’re having guests over for dinner, it can always be difficult to figure out what appetizer or starter to serve them. However, these delicious pâté recipes can become your staple appetizer. Vegetable pâté is a recipe that comes from a French spreadable paste that’s usually made with minced meat, liver, or fat. Vegetables, herbs, spices, and wine are usually added to give it a better and more complex flavor.

For all the vegetarians out there, we have come up with these three recipes to make meatless pâtés.

Vegetable Pâté Recipes

Keep in mind that there’s a difference between vegetarians and vegans: vegetarians don’t eat meat, while vegans don’t eat any animal products, including dairy. Among the three recipes below, one is vegan and the other two are vegetarian.

1. Broccoli pâté

Nutrition and health experts praise broccoli for its high vitamin C content, essential minerals like selenium and potassium, dietary fiber, and proteins. That’s why it makes for such a great ingredient for this recipe!

Remember that this recipe is like an appetizer. You can serve it with any other dry ingredient like crackers, bread, or even some seafood.

Ingredients

  • 1 cup of broccoli (120 g)
  • 1 cup of water (120 g)
  • 3 tablespoons of red wine (45 ml)
  • 1 tablespoon of salt (15 g)
  • 1 tablespoon of extra virgin olive oil (15 ml)
  • 1/2 of an onion (50 g)
  • 1 tablespoon of pepper (15 g)
  • 1 egg
  • 1/2 tablespoon of cumin (8 g)
  • 1 tablespoon of milk (15 ml)

Preparation

  • First, remove the stems from the broccoli.
  • Then, place the broccoli in a pot with enough water to cover the broccoli and set at medium heat.
  • After about five minutes, strain the broccoli and pass it through cold water.
  • Then, place the broccoli in a blender with the onion, red wine, and olive oil. Blend until it becomes a paste.
  • Next, add the salt, pepper, cumin, egg (to thicken), and milk. Blend again.
  • Finally, place it in a bowl and serve with some whole grain bread or crackers!

2. Vegan cucumber pâté

Cucumber is a vegetable that’s rich in dietary fiber and vitamins A, B, C, and E. It also contains essential minerals, such as potassium, iron, and phosphorus.

In addition, cucumbers are ideal for skin care, since they’re filled with antioxidants that protect us from free radicals.

Cucumbers also help strengthen the connective tissues of the body, help prevent cardiovascular diseases, and contribute to good digestion by improving the movement of digested food through the intestines.

Ingredients

  • 1 large cucumber (200 g)
  • 1 tablespoon of cornstarch (15 g)
  • 2 tablespoons of vinegar (30 ml)
  • 1 tablespoon of salt (15 g)
  • 2 cloves of garlic (3 g)
  • 1/4 cup of white wine (60 ml)
  • 1/2 of an onion (50 g)
  • 2 green bell peppers (40 g)
  • 1 tablespoon of pepper (15 g)
  • 1 tablespoon of extra virgin olive oil (15 ml)

Preparation

  • First, wash the cucumbers well and cut them into medium-sized pieces.
  • Then, cut the onion, green bell peppers, and garlic cloves into small pieces. Sauté them with a little bit of olive oil
  • Next, place the cucumber pieces, sautéed vegetables and wine in a blender. Blend at medium speed.
  • Now, add the cornstarch, salt, pepper, and vinegar to the blender. Blend again at medium speed until it becomes a paste. 
  • Finally, serve in a bow and spread on crackers or bread or serve it with seafood.

3. Eggplant pâté

Eggplant is an important vegetable for any balanced diet. It’s also perfect for making vegetable patés.

Eggplant contains antibacterial and antiviral properties, and it’s also a diuretic that’s rich in fiber and folic acid.

Ingredients

  • 1 eggplant (250 g)
  • 2 cloves of garlic (3 g)
  • 1 tablespoon of chopped parsley (15 g)
  • 1 tablespoon of lemon juice (15 ml)
  • 3 tablespoons of Greek yogurt (45 g)
  • 1 tablespoon of salt (15 g)

Preparation

  • First, cut the eggplant into medium-sized pieces and place them in a blender.
  • Then, add the lemon juice and Greek yogurt and blend at medium speed.
  • Next, add the garlic, parsley, and salt. Blend again until it becomes a thick paste.
  • Finally, serve it in a bowl with bread, crackers, celery sticks, or carrot sticks.
  • Enjoy!
