  • 1 tablespoon of salt (25 g).
  • 15 mushrooms (115 g).
  • 2 cups of breadcrumbs (200 g).
  • 2 cups of grated cheese (200 g).
  • 1 tablespoon of finely chopped parsley (25 g).
  • 2 tablespoons of olive oil (60 ml).
  • 4 skinned and chopped garlic cloves (35 g).


  • You will need a bowl to mix everything.
  • Add the breadcrumbs, grated cheese, garlic, parsley and oil, then well.
  • Carefully take the stalks off the mushrooms and open them so you can stuff them with the mix you’ve just made.
  • Put them on a heat-resistant tray and bake them in the oven at 200º C for 15 minutes.
  • Once this time is up, let them sit for a few minutes at room temperature.

  • 1 onion (75 g).
  • 1 tablespoon of salt (25 g).
  • 5 cups of mushrooms (500 g).
  • 1/2 cup of almonds (50 g).
  • 2 sprigs of parsley, chopped (10 g).
  • 1 tablespoon of olive oil (30 g).
  • 2 and a 1/2 cups of white wine (230 ml).
  • 4 cloves of garlic, skinned and chopped (40 g).
  • 1 tablespoon of chopped red pepper (25 g).


  • With a pestle and mortar, thoroughly grind the garlic, almonds and parsley.
  • Fry the onions with salt and a splash of olive oil in a frying pan, until they turn golden.
  • Then, add the mushrooms to the same pan and fry it all for 2 minutes. Just before taking it off the heat, add the peppers and let them fry with the other ingredients.
  • Add the wine to this mix and allow it to cook.
  • When you can see that the wine is about to dry up, add the contents from the mortar.
  • Let it all cook for 10 minutes.
